What are the optimal dimensions and resolution(s) for cover art? Apologies if this information is already mentioned somewhere else.

Hey Ryan. Good question!
Not sure its mentioned anywhere here, but CD cover sizes are approximately 4.75 inches by 4.75 inches, so that seems sensible dimensions-wise for most purposes. For the image resolution, ideally 300 dpi or higher for print purposes. But if it is purely for online uses then 72 dpi should be sufficient.
As a general rule of thumb, a larger image at a higher resolution is always a better idea when posting cover art for a project as it can be made smaller without distorting the image; where as increasing the size of a smaller image will distort it. In all cases, I'd suggest that the image at least be square.

Got it. Thanks Lee! :)

Forgot to add - as an absolute minimum, the image should be at least 350 pixels by 350 pixels (72 dpi) so that it fits nicely on the project page and/or on the datasheet page.
